SALTFISH CAKE RECIPE
Prepare dried salted codfish by soaking it in cold water overnight
to remove excess salt and to rehydrate. Throw off water. Add
fresh water and bring to a boil. If codfish is still too salty
repeat the boiling process again.
Ingredients
2 cups of deboned and shredded codfish
½ small onion chopped
2 medium scallions chopped
¼ cup flower
1 egg
¼ teaspoon baking powder
½ teaspoon curry
½ teaspoon black pepper
1 teaspoon scotch bonnet sauce or hot pepper sauce
1 teaspoon thyme

Process
- Place everything except flour and baking powder in a blender
and blend to a fairly smooth consistency. Add a little water
if needed.
- Pour into large bowl and fold in flour and baking powder
in mixture.
- Heat a third cup of oil in an iron skillet on medium heat.
- Spoon batter into hot oil.
- Flatten each with the back of the spoon.
- Fry each side until golden brown.
- Place on paper towel to remove excess oil
Great as a side dish or for breakfast.
