JAMAICAN TRIPE AND BEANS RECIPE
INGREDIENTS:
2 lbs tripe
1 Can Broad Beans, drained
2 onions, chopped
2 stalks escallion, chopped
1 sprig thyme
2 tablespoons curry powder
2 tomatoes, chopped
Hot pepper
Black pepper
Wash tripe carefully the cut into
small pieces. Place tripe in pot and cover with water. Bring
to a boil, then lower heat and simmer until tripe is tender usually
about 2 hours. Add the onions, escallion, thyme, curry powder,
hot peppers and black pepper. Add water if necessary. Continue
to simmer for about 6-8 minutes then add the broad beans and
simmer for an additional 10 minutes. Gravy should thicken.
Best served with steamed white rice.
Serves: 4-5
